History of corn

Domesticated around 9,000 years ago in Southern Mexico, corn has been consumed worldwide ever since the Columbian Exchange began in the late 15th Century. By weight, it is now the most widely produced crop in the world with well over 1.1 billion tons by 2020. Most modern varieties have yellow kernels and have been heavily genetically modified.
Older varieties can be found with red, blue, purple, white, orange, green and multi-colored kernels. Common foods made with heirloom corn are Mexican tortillas and tamales, Italian polenta, American grits and cornbread. They are also used extensively in USA moonshine and distillate production.
Heirloom corn is higher in protein and oil content and contains a higher proportion of vitamins and minerals. Through the process of Nixtamalization, niacin is released for human consumption. Nixtamalized corn is used for both hominy and masa flour, among other uses.
